Espetos de sardinas
it's a traditional Andalusian dish. You will see it in almost every seaside restaurant. Especially in those with access to the beach. Large open grills, usually shaped like boats, are packed with glowing charcoal. Chefs pierce the ground with sharp skewers. Each one has at least a few sardines, which are eaten by hand after being grilled. You pull off the head and scrape the meat from both sides. Only the tail and spine are left. The dish is delicious, but very salty, and therefore a portion usually consists of only 5-7 pieces.
